Tabieats: Quick 3-Minute Gluten-Free Low-Carb Mug Bread Recipe

My friend Shinichi Mine at Tabieats is always coming up with great and exciting recipes.  He recently came up with this terrific recipe for gluten-free bread using a blend of almond and coconut flours that I wanted to share with you.  Looks simple and so delicious!

This amazing gluten-free bread is made with almond flour and only takes 3 minutes from start to finish! Eat them as is, or toast them to make them even better.

Makes one small loaf
1/3 cup almond flour
1 tablespoon coconut flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 egg
1 1/2 tablespoons grapeseed oil ( you can use butter or olive oil if you prefer )

Grease one mug with some oil.
Put all ingredients in a small bowl and mix well with a fork.
Pour mixture into the mug. Microwave on high for 90 seconds. You may need to cook it a few seconds longer depending on your microwave oven.
Let it cool in the mug for 3 minutes.
Gently pop the bread out of the mug and slice.

Toasting them will make them taste even better.
You can also add 1/2 tablespoon of sunflower seeds or pumpkin seeds for extra crunch.
Add dried fruits such as raisins for a sweeter bread. Enjoy!
